Pancake Coffee Cake




I have made many pancakes the other day and realized that Pancake Coffee Cake must be made. When I was a little girl I have made a similar cake with my sister and it was really amazing. So many great memories attach me to this dessert assembled with a bunch of pancakes fixed to each other with creamy coffee frosting and topped with chocolate ganache. Follow the recipe and enjoy in this awesome cake.


Ingredients for the pancakes

  • 2 eggs
  • 10 tbsp of flour
  • 1 1/2 cup of milk
  • 1 tbsp of oil
  • a pinch of salt
  • a little sugar
  • 1 tsp of baking soda
  • don’t forget extra oil for greasing the pan


Method
Whisk the eggs with sugar, salt and while whisking add all of the above written ingredients. Whisk the batter until it becomes smooth and slightly thick.
Heat the pan, grease it and pour the batter in. Tilt the pan to move the batter around in order to form a round and thin pancake. I always use a spoon ladle for transferring batter into the pan – and always a same amount. After 30 seconds flip the pancake to bake the other side too.



Ingredients for the coffee cream

  • 2 cups of milk
  • 4 tbsp of sugar
  • 1 vanilla powder pudding
  • 2 tsp of granulated coffee (I used Nescafe)
  • 1 cup of whipping base






Method
Stir the powder pudding and sugar in some milk, boil the rest of the milk  and cook in the pudding. Add the coffee in the hot pudding in order to melt it and than cool it down. In another bowl mix the whipping base until firm and add the cold pudding while mixing to get a smooth coffee cream.









Assemble the cake by creaming every pancake and arranging it on the other until you have pancakes and cream left.
Make the chocolate ganache for the topping like I did. If you don't like it with chocolate than you top the cake with whipping cream or decorate the cake with Nutella or just use your imagination :-)
