Bell Pepper Peperonata


If you adore peppers just as I do, you will love this extra simple, a few ingredient dish. This is only a basic peperonata which can be enriched with a lot of seasoning or by adding onions, garlic, eggplant or 1-2 eggs to make a delicious and light meal. If you like it chili, use one tiny chili pepper to indulge yourself. Serving this delicious meal comes with mood... I was in a mood for chicken nuggets in a shape of a dinosaur. My son was so happy - for the dinosaurs - off course! :-) 

Ingredients

  • large bell peppers
  • 2 tbsp of olive oil
  • 1 tsp of salt
Method
Cut the peppers into stripes  or if you like it better than dice shape should be fine. Put the olive oil into the pan on the medium heat. Add the chopped peppers and saute for 5 minutes. Add salt and cook it for another 5 minutes.


Cover the pan and simmer the peppers for 15-20 minutes until the peppers become soft. Remove the lid and cook until the liquid evaporates.
