Bundt Cake - Panettone



I really like the combination of chocolate, nuts and dried fruits. In this cake, I have found that perfect mixture coated with shiny chocolate glaze. Sometimes, this cake is called Panettone cake or Gugelhupf cake, depends of the origin you're coming from. Perfectly moist, melts in your mouth and leaves small delicious parts to chew with pleasure. I have often read in recipes that all those fruits must be chopped roughly, but if you chop them finely, tastes combine better so the pleasure is complete. I have to admit that this is a simple cake to make if you have enough time for chopping all those fruits, chocolate and nuts you have prepared. So, start chopping and bake this cake to indulge yourself.



Ingredients for the cake

  • 3 cups of flour
  • a pinch of salt
  • 1 tsp of baking powder
  • 3 egg yolks
  • 2 eggs
  • 1 cup of brown sugar
  • 1 cup of butter
  • 3/4 cup of milk
  • 1/2 cup of warm water
  • 2 tsp of yeast
  • 1/2 cup of sour cream
  • 2 tbsp of rum
  • 1 tbsp of grated orange peel zest (without the white part)
  • 1/2 cup of chopped black chocolate
  • 1/2 cup of chopped white chocolate
  • chopped dry fruits - as much as you like - I have used 1 cup
  • chopped nuts - as much as you like - I have used 1 cup
  • 2 tbsp full of Hershey's chocolate spread
  • chocolate for the glaze
  • a lot of different dried fruits for decoration
Method
If you're done with chopping all those dry fruits (dry figs, dry dates, dry plums...), nuts( pecans, walnuts, almonds...) and chocolate (white and black) you are ready to take a next level. Mix all those ingredients together and bake this delicious queen of the cakes. So, mix the dry ingredients first, in another bowl mix the eggs, sugar and the butter, add the dry mixture you have prepared followed by milk, water, sour cream and the yeast. 


Leave it to rest for 20 minute and then add the chopped fruits, chocolate and nuts. Pour the batter into the well buttered bundt pan and add the Hershey's chocolate spread all over the cake in small amounts press into the batter. Leave it all to rest for 15 minutes more. Preheat the oven and bake the cake for about 45 minutes on 375 F degrees. When it is done, leave it to cool and decorate it with chocolate glaze and dry fruits.
