Thin Waffles


Light and crisp waffles can be a nice dessert after lunch, quick and fresh breakfast or can play cookies beside tea at tea-time. You need a batter thicker than pancake batter and a waffle iron to bake it and off course, something to cream it with... I personally like homemade jelly or powder sugar and cinnamon, but use your imagination and cream the waffles with it :-)


Ingredients for the batter

  • 2 eggs
  • 2 cups of milk
  • 300g of flour
  • 1 cup of oil
  • 2 tbsp of sugar
  • 2 tsp of baking powder
  • a pinch of salt
Method
Divide egg whites from egg yolks. Mix the egg yolks with sugar until sugar melts and add all the other ingredients. In the other bowl mix the egg whites until firm and stir it in the egg yolks with wooden spoon slowly. Pour the batter into the waffle iron with a soup spoon, not too much, and bake it for a few minutes. You can cream it immediately or latter, and use sweet or salty cream - it's your choice!
