Pork Empanada


Empanadas are very practical meal for lunch, dinner or even for a dessert if you stuff them with something sweet. For this occasion, I have made pork filling and a little bit of cheese which melted and gave empanadas an extra taste. Very simple dough and relatively quick meal can be served with salad of your choice... My choice of salad was a Quick Bean Salad and I haven't made a mistake with it. Great combination!



Ingredients for the dough

  • 3 cups of all purpose flour
  • 1/4 tsp of salt
  • 6 oz of unsalted butter
  • 1 egg
  • 4-5 tbsp of water


Ingredients for the pork filling

  • 2 cups of minced pork meat
  • 2 tsp of salt
  • 1 tsp of pepper
  • some grated garlic
  • 3 tbsp of oil
Method
Knead the dough out of the ingredients and put it in the plastic bag to refrigerate it for half an hour. In the meantime fry the meat on the grated garlic and season it nicely. The meat must be cold when you start the filling on the dough. 
Roll out the dough and cut circles using a small plate. Place the spoonful of filling in the middle of the circle, a piece of cheese (of your choice) and fold the dough circle in half and close the empanada by sticking the edges ( press it with your fingers). If it doesn't want to stick, cream it with egg whites and try again.
Coat the empanadas with egg yolks and salt them a little. Bake in the preheated oven on 400 F degrees for 20-25 minutes.. until they become light brown.
