Greek Semolina Cake with Plum Filling

Greeks certainly know how to make a delicious dessert. This one is an ordinary variation enriched with fresh and homemade plum filling. I have made it so soft and tender, i couldn't believe either. I served it after lunch, as a dessert and it was amazing for everyone. I have collected only nice comments.:-)


Ingredients for the cake

  • 3 eggs
  • 3 tbsp of sugar
  • 1 tbsp of vanilla extract
  • 6 tbsp of semolina

Ingredients for the syrup

  • 1 cup of water
  • 1/2 cup of sugar


Ingredients for the plum filling

  • 2 cups of plums
  • 1 cup of water
  • 1/2 cup of sugar
  • 3 tbsp of corn starch
Method
Divide egg yolks from the egg whites. Mix the egg whites until firm and add the sugar while mixing. Add the egg yolks, one by one and at the end add semolina. Pour the batter into the round baking pan covered with baking paper and bake in a preheated oven on 370F degrees for 30 minutes. 
In the meantime, cook the syrup (water and sugar)...it has to be warm when the cake comes out of the oven. Pour the syrup on the cake and leave it to cool. 
Put the plums into the bowl with sugar and a bit of water. When it starts to boil stir in the cornstarch, previously mixed with the rest of the water. Simmer it slowly until thickened.
Serve it with a smile and say "greeeeeek" :-)
