Fig Jelly Roll Cake


Is there anything quicker than this roll cake? It's crucial that you have finely milled cookies, fig jelly and chocolate... all the other ingredients are optional and can involve your creativity to change them. This is a no bake cake for unexpected guests or a quick after lunch dessert. Trust me when I tell you that the cake served it's purpose and disappeared after lunch as it came.



Ingredients for the cake

  • 2 1/2 cups of finely milled cookies
  • 1/2 cup of powder sugar
  • 2 tbsp of cocoa powder
  • 1 cup of milk
  • 4 tbsp of fig jelly
  • 1/2 cup of melted chocolate
  • 2 tbsp of butter
Method
Mix the milled cookies, cocoa powder, powder sugar and milk together and form a dough. Instead of milk you can add orange juice or some other juice you prefer. The liquid, you have prepared, add gradually because sometimes is not needed the whole cup. It depends of the sort of cookies. Roll out the dough on the baking paper and cream the fig jelly on it evenly. Roll the cake in and prepare the chocolate glaze for the topping. Just add the butter into the warm, melted chocolate and decorate the cake.
