Rubber Cake


Here is one gorgeous layered cake with soft and fluffy cream. Taste of this cake is so delicate and mild. Definitely looks like old fashioned cakes that my grandmother used to bake. I love the contrast in colors and the texture of the cream.


Ingredients for the cake layers

  • 2 cups of milk
  • 1 cup of sugar
  • 25 tbsp of flour
  • 3 tbsp of oil
  • 4 tbsp of homemade jelly (any kind)
  • 2 tbsp of cocoa
  • 2 tsp of baking soda
Method
Mix all of the ingredients and divide the mixture into 4 equal amounts. Bake 4 layers in a 20x30 cm pan covered with baking paper on 400 F degrees for 5-8 minutes. The baked cake layers are elastic, bubbly and soft - don't tend to brake.



Ingredients for the cream

  • 2 cups of milk
  • 10 tbsp of sugar
  • 6 tbsp of flour
  • 2 tbsp of vanilla extract
  • 1 cup of butter
Method
Make the cream like a pudding and when it cools down mix in the butter. There is enough cream to cover all the cake layers, don't worry.
Decorate the cake as you wish. I just sprinkled it with chocolate crumbs.
