Fruit Banana Cake





Italians often make these kind of cakes. Their custom is to learn to make dry cakes with fruits for Christmas especially. Bread cakes, I call them. They look good beside a cup of tea or coffee.



For this awesome cake you will need:

  • 1 cup of butter and some additional for greasing the pan
  • 20 tablespoons of flour with baking powder
  • 11 tablespoons of sugar
  • 10 tablespoons of sliced dark raisins
  • 6 tablespoons of chopped walnuts
  • 10 tablespoons of dried and sliced candied cherries
  • 2 eggs
  • 0,5 kg of bananas (weight measured with peels)
  • 1 bread pan

Let's try to make it!

1 Grease the pan and cover it with baking paper

2 Put the flour into the bowl and add the butter. Crumb the butter and flour until it all looks like a lot of crumbs. Add sugar, raisins, walnuts, and candied cherries and stir it well.

3 Beat the eggs and smash banana, so add into the bowl. Stir it all hard.

4 Bake in a preheated oven on 160C (320F) for about 75 minutes until the cake grows up and turns very firm and crusty. Put a small stick into the middle of the cake and if it comes out clean then the cake is done.

5 Leave the cake in the bread pan to cool down and turn up the pan, take out the cake and peel off the baking paper. Before you serve it let it cool down throughout.

Tip: If you'd like to change the flavor of this cake you'd add some scoured lemon peel or add a teaspoon of mixed spices.
