Summer biscuit with strawberries





















This is a real summer cake with unforgettable strawberries and maracuja fruit dipped in whipped cream. Fresh and tasty cake for hot sunny days. When I am making this cake, I eat so many strawberries that later I can't look at the acake :-) Learn from my mistakes... close your mouth while making this cake.



For this beautiful cake you need:

  • 3 eggs,
  • 6 tablespoons of sugar,
  • 7.5 tablespoons of flour(combined with some baking powder),
  • 1.5 cup of whipped cream,
  • 1.5 cup of sliced strawberries,
  • 1 half of the maracuja fruit,
  • strawberries halves for decoration.


Lets begin!

1. The bottom of the pan (18cm-7,25inch diameter) cover with baking paper and grease it with some butter.

2. In the big  bowl put sugar and eggs. Stir it well, until it gets whitish, smooth and so hard  so the mixer doesn't leave traces on the surface.

3. Add half of the flour and mix it carefully. Do the same with the other half of the flour.

4. Pour the mixture into two prepared cake pans.

5. Bake the cake in the oven on 190C (380F) 20-25 minutes, until it becomes golden yellowish.

6. Use the whipped cream, fruits and the baked cakes to make the cake just like the one on the photo.



Tip: The cake is prepared with no fat, so consume it as soon as possible.
