Chocolate Mousse Cake with Cherries




I had this cake for a few times and couldn't forget it - that fluffy chocolate mousse with cherries here and there and that gorgeous chocolate topping. Once the name of this cake was Lúd Láb and I had it in Hungary. I have made this cake and I am extremely proud of it... :-) I have to brag about it - you will brag too if you make it!


Ingredients for the cake

  • 5 eggs
  • 5 tbsp of sugar
  • 4 tbsp of flour
  • 2 tbsp of cocoa powder
  • 1 tsp of baking powder



Method
Mix the egg whites with sugar, add the egg yolks and all the other ingredients and put the batter in the pan covered with baking paper. Bake the cake on 400 F degrees until it get's nice color.
It's time to make a chocolate mousse :-)


Ingredients for the chocolate mousse

  • 2 cups of whipping base
  • 250 g of chocolate
  • 4 egg yolks
  • 70 g of sugar

Melt the chocolate in one bowl and mix the egg yolks with sugar in the other bowl. Boil 1/2 cup of whipping base and slowly add the mixed egg yolks with sugar while mixing. Add the melted chocolate and cool it down on body temperature. In the meanwhile, mix in the whipping base and add it spoon by spoon to the cold chocolate cream.







Don't forget the cherries! You can use the frozen cherries or canned cherries or the fresh ones. The amount is not an issue, it's your decision!
The cake you have baked, cut in half and fill it with chocolate mousse mixed with cherries. Pour the chocolate topping on the cake and decorate it with cherries :-)
