Cheesecake with Chocolate Ganache



Old fashioned, delicious and always welcome cheesecake with inevitable chocolate ganache and a little bit of whipped cream - waiting for you to grab it. When you taste it, you have to take another slice just to indulge your feeling for more and more...That is why I don't bake it often - I don't know how to tell this cake: "No!"




Ingredients for the crust

  • 4 ounces (120g) of finely milled biscuits
  • 4 tbsp of melted butter
  • 1 tbsp of sugar

Mix all ingredients and form a crust in the pan. Bake this crust for 12 minutes on 325 F degrees just to be sure that it would be crunchy while eating the cake.



Ingredients for the filling

  • 1 cup of cream cheese
  • 1/2 cup of heavy cream
  • 1 3/4 cups of sugar
  • 1/8 tsp of salt
  • 2 tsp of lemon juice
  • 1 tsp of vanilla extract
  • 6 large eggs
  • 3 tbsp of flour




Method
Mix the cream cheese with all the other ingredients except eggs. When you get a smooth cream, add the eggs (room temperature) one by one while mixing. Pour the cream filling on the cool crust and bake it in the preheated oven on 500 F degrees for 10 minutes. Take a piece of foil to put it on the top of the cake and decrease the temperature to 200 F degrees and bake it for another 40 minutes.
Spread the ganache on the top of the cool cheesecake and decorate it with whipped cream and some chocolate balls.
