Fanta Cheesecake





I had an urge for a refreshing sweet cake and among my recipes was this Fanta Cheesecake, so I gathered all the ingredients and started baking. I had help from my sweet niece Natasha. We have creamed a double cheese frosting on a cocoa cake and used Fanta juice for the jelly. Naturally, the cake turned out awesome and above all refreshing!



Ingredients for the cake

  • 6 egg yolks
  • 6 tbsp of sugar
  • 2 tbsp of cocoa
  • 1/2 cup of oil
  • 6 tbsp of flour
  • 2 tsp of baking powder






Method
Mix the egg yolks with sugar and add all the other ingredients. Mix until it gets creamy and pour the batter into the baking pan covered with baking paper. Bake the cake on 375 F degrees until it gets nice color. Cool the cake, cream it with the cheese frosting and top it with Fanta jelly.



Ingredients for the Cheese Frosting

  • 2 cups of cottage cheese
  • 6 egg whites
  • 10 tbsp of sugar
  • 1 cup of butter
  • 1 tsp of vanilla extract
  • 5 tbsp of powdered sugar




Method
Mix the egg whites with sugar in the first bowl, mix the butter with powdered sugar, add the cottage cheese to the butter and slowly mix in the egg whites. As the cottage cheese was too soft I had to add some gelatin and it helped a little bit.


Ingredients for the Fanta Jelly Topping

  • 3 cups of Fanta juice (7 dl)
  • 80g of vanilla pudding (2 packs)

Method
Boil the Fanta juice ( leave some juice cold to mix with the powdered pudding in ) and cook the pudding until firm!
