Absinthe Blue Cake


I have discovered an extravagant cake with absinthe blue jelly glaze. Amazing yoghurt cake with small orange pieces inside the cream and the decorating orange slices on top.  Absinthe is historically described as a distilled, highly alcoholic beverage, so this cake is not for persons under 18. This birthday cake was highly rated among all of us on the party and one is certain - it has to be made for at least once in your lifetime!





    Ingredients for the cake

    • 4 eggs
    • 8 tbsp of sugar
    • 8 tbsp of flour
    • 1 tsp of baking powder
    • 1/2 cup of oil


Ingredients for the cream and jelly glaze

  • 3 cups of yogurt
  • 3 cups of whipping base
  • 2 tsp of honey
  • 1 lemon juice
  • 9 pkgs of gelatine
  • 5 cups of Absinthe beverage
  • 5 oranges






Method
Beat the 4 eggs with 8 tbsp of sugar, add 8 tbsp of flour with baking powder and the oil. Bake the cake approximately 15 minutes in hot oven. As it's cooling down make the yoghurt cream by mixing yoghurt, already beaten whipping base, honey, lemon juice and 6 gelatine pkgs soaked in  cup of hot water for 5 minutes.






Cut the oranges in order to get 9 big circles and the rest cut in very small pieces. Stir the cream with small pieces and pour it on the cake. Put the orange circles on the top and glaze it with Absinthe blue jelly which you can make by soaking 3 gelatine in a 1/2 cup of hot water for 5 minutes and stir it with the beverage. The cake has to be refrigerated until serving.
