Pomegranate Yogurt Cake



Delicious and refreshing cake for summer hot days. Sometimes it comes good in winter after a good salty meal. This one was made by my brothers wife for his birthday. I never knew that she bakes so pretty cakes. This cake is so creamy, moisty, fruity and above all light. It was a tasty surprise for all of us. Way to go, Sandra!



Ingredients for the cake

  • 300g of finely chopped biscuits
  • a cup of orange juice
  • 100g sugar
  • 1 hand full of chopped pecans
  • 1 tbsp of melted butter

Ingredients for the cream and jelly glaze

  • 3 cups of yogurt
  • 3 cups of whipping base
  • 2 tsp of honey
  • 1/2 cup of confectionery sugar
  • 1 lemon juice
  • 9 pkgs of gelatine
  • 2 chopped oranges in little squares
  • seeds from 1 pomegranate
  • 2 cups of orange liqueur
Method
Make the no bake cake mixture from ingredients mentioned above. Mix the whipping base, yogurt, honey, lemon juice, already prepared 6 gelatines in hot water, little squares of oranges and pomegranate seeds. Put this mixture over the cake, sprinkle it with pomegranate seeds and make a gelatined liqueur for jelly glaze. On sides she decorated with orange circle slices.
