Light Elegance - Birthday Cake with Chocolate Flakes



When I am thinking about what kind of cake to prepare for a birthday party, I always want it to be original, creamy and tasty - off course. The most lovable cakes are those with chocolate, walnuts and lots of cream, at least in our house. So, I have composed a cake that suits every possible criteria for a perfect birthday cake. This cake is elegant and light creamy delightfulness - everybody's desire. In relatively short time you can make this cake to fulfill the birthday menu.




Ingredients for the cake

  • 4 eggs
  • 8 tbsp of sugar
  • 8 tbsp of bread crumbs
  • 2 tbsp of flour
  • 2 tsp of baking powder
  • 1/2 cup of toasted and milled walnuts




Method
Mix the egg whites until foamy, add the sugar and egg yolks. All the other ingredients combine and add into the bowl with mixed eggs by slowly stirring it. Pour the mixture into the pan covered with baking paper and bake the cake on 400 F degrees until it gets a nice brownish color.


Ingredients for the cream

  • 5 cups of milk
  • 3 packs of vanilla instant pudding powders
  • 1 cup of butter
  • 8 tbsp of sugar
  • 2 tbsp of confectionery sugar
  • 1 cup of crushed waffle biscuits
  • 2 chocolate bars
  • 1/2 cup of toasted and milled walnuts






Method
Make the vanilla pudding in milk, with 8 tbsp of sugar and cool it down. Beat the butter with confectionery sugar and add the cold vanilla pudding. Mix it until it combines well and until it gets fluffy.
Divide the cream in two bowls. In the first half add the crushed waffle biscuits. Stir it well and cream it on the cake.







The cream in the second bowl was waiting for milled, toasted walnuts to be stirred in. In order to be different color from the first cream I had to darken it with some melted chocolate - I used dark chocolate and a little bit of milk chocolate.






I tried to say no to this cream but it was unsuccessful try. As the cream got on the cake the bowl was attacked by me! :-) I couldn't resist it - no way!
As the cake has two creams on, leave it in the cold place for a while.






Whipping base and chocolate flakes is the decoration I have chosen for this cake. Chocolate ganache or chocolate glaze could be great too. Be creative and decorate your cake in color of your mood. :-)
