Kranzl Cookies Filled with Homemade Jam

Old German recipe for small cookies filled with homemade jam - I like it with plum jam. Somehow  brings me back to childhood when my mum made them so often but always with children's help..so I was there every time. Nowadays, I have to make them myself - no matter, I enjoy it very much! I must say that the taste of the Kranzl Cookies really inspires you to eat more and more. :-)

Ingredients for Kranzl Cookies dough

  • 1 cup of sugar
  • 1 cup of butter
  • 1 cup of milk
  • 3 egg yolks
  • 1 tsp of sodium bicarbonate
  • flour as it takes to make a smooth dough

Method
Make a dough out of the ingredients and leave it to rest for 15 minutes. Prepare little shaped dough cutters and a plastic thimble to cut the dough and, off course, a jar or homemade plum jam or what ever jam you have or like :-). Spread the dough on the working surface - about 1/4 in thickness and cut shapes.

Put the shapes in the pan covered with baking paper, place a tsp of homemade plum jam on each one and cover it with another same dough shape with a hole in the middle which you cut out with plastic thimble. That is a crucial moment and don't forget it. The jam in the middle is like a colored decoration. A few different jams can be used to be more exiting.

Bake those nice little cookies in the hot oven until they get brownish color. You can make lighter and darker ones because they taste differently and I must say the darker cookies have a better taste for me.
