So many times I have eaten this kind of cake and never tried to make it myself. The time has come and the ingredients were all here. I was a little afraid that it wouldn't bake good or an hour in the oven seamed to me like an eternity. Trust me, it is not complicated at all. I have made this gorgeous Meringue Cake with Pecans, creamed with egg yolk filling and chocolate ganache and covered with whipping base, so you can do it too :-)
Ingredients for one cake (I made two of them)
- 3 egg whites
- 9 tbsp of sugar
- 1 tsp of vinegar
- 3 tbsp of chopped pecans
- 2 tbsp of flour
Method
Mix the egg whites until firm. Add sugar and mix for a few minutes. Add vinegar, flour and pecans, stir it thoroughly and bake it on the back of the pan (dry it) for an hour on 248 F.
Ingredients for the egg yolk filling
- 6 egg yolks
- 6 tbsp of sugar
- 1/2 cup of chocolate
- 1 cup of butter
- 1/2 cup of powdered sugar
Method
Mix the egg yolks with sugar and cook it for 10 minutes over the steam. Put the chocolate in eggs to melt. Mix the butter with powdered sugar and add into egg cream. Mix it all together for a few minutes. Make some chocolate ganache and assemble the cake like on pictures. I have decorated the cake with whipping base, but this cake can take anything as it is so delicious and tempting.
