Quick No Bake Pineapple Cake



It's always a pleasure to make this cake. It's so fast to make and delicious to taste - I just can't resist it! This cake is made with plain square cookies, pecan cream and chopped pineapple. If you don't have enough time to bake a cake follow this recipe and indulge yourself with this irresistible and simple cake.



Ingredients

  • 600 g of plain cookies or biscuits
  • 1 canned pineapple
  • 1 cup of chopped pecans
  • 6 eggs
  • 1 cup of sugar
  • 1 cup of butter
  • 6 tbsp of powder sugar



Method
Use the 11×13 inch (28x33cm) sized pan and put 1 row of plain biscuits soaked in the pineapple juice from the can. Mix the egg yolks with sugar until the sugar melts, add the chopped pecans. In another bowl mix the butter with 3 tbsp of powder sugar, add the egg yolks and pecans while mixing. Chop the pineapple on small pieces and add to the cream. Cream half of the batter on biscuits, put another row of soaked biscuits and cream the rest of the batter on.






Mix the egg whites with 3 tbsp of powder sugar until firm and creamy, add some powdered whipped cream and mix it until creamy and delicious :-) That is the cream that was decorating the top of this marvelous cake.
It would be great if you could leave it for an hour, at least, to rest and be softer.
