Strawberry Cake





Here's one light cake for hot summer days and nights :-) This cake is so mild tasted and fluffy with strawberries and jelly covered with vanilla cream and whipping base topping. The cake I baked is the simple one just to be there to hold these nice ingredients all together. I ate 2 slices without a problem 'cause of the small amount of sugar and so many strawberries.


Ingredients for the cake

  • 4 eggs
  • 4 tbsp of flour
  • 2 tbsp of bread crumbs
  • 6 tbsp of sugar
  • 1 tsp of baking soda



Method
Mix the egg whites until firm, add sugar and egg yolks and mix some more. It's time to add flour, bread crumbs and baking soda. Stir all ingredients together and pour it in the pan (11x13inch) covered with baking paper. Bake the cake on 400 F degrees until it gets nice color.



I have bought powder vanilla cream and mixed it with milk as it says on the bag. It was simple for me and extremely fast, and I didn't regret it.
I have bought so much strawberries  just to be enough for the cake. It's never enough :-) You can buy as much as you like to be on the cake.
The first row of strawberries (lying on the baked cake) are just stirred with powder sugar and cut into small pieces.



Ingredients for the Strawberry Jelly

  • 2 cups of cut strawberries on pieces
  • 6 tbsp of sugar
  • 1 vanilla powder pudding
  • 1 cup of water
Boil the strawberries with sugar and add the pudding stirred in the water. Cook until it becomes thicker. Cool it down.




Try to assemble the cake like on the pictures. Cake is first and covered with cut strawberries on pieces, than comes the vanilla airy cream and covered with strawberries jelly and topped with whipping base.
