Homemade Fig Jam Cake




I have got a tip from a chef to make this cake. I haven't regret it...the cake is astonishingly tasteful. The crusty edges on a tasty almond cake in a combination with figs and decorated with whipping cream - what a pleasure. As spring has come, we sat in the garden and enjoyed this lovely fig discovery. I can recommend this cake to everyone as the preparation goes quickly - in a few minutes, so when the cake is left in the oven - you don't have to do anything - and the cake is done! :-)




Ingredients

  • 1 cup of butter
  • 1 cup of sugar
  • 3 large eggs
  • a fist full of almonds
  • 10 tbsp of flour
  • 1/2 tsp of salt
  • 1 tsp of vanilla extract
  • 1/2 cup of yogurt
  • 1/2 jar of homemade fig jam
  • 1 cup of whipped cream for decoration


Method
Mix the butter with sugar until it gets lighter color, add the eggs one by one as the mixing goes on. Add the finely chopped almonds, flour, yogurt, salt and vanilla extract and mix until all ingredients together get smooth. Pour the batter into the pan covered with baking paper and arrange fig pieces from homemade fig jam on it.



Bake on high temperature for 15 minutes and than reduce the temperature on 340 F degrees and bake for another 40 minutes. Leave the cake to cool down and then cut the pieces and decorate with whipped cream and some pieces from the homemade fig jam.
