Oatmeal Brownies with Chocolate Ganache and Goji Berries




Always popular brownies enriched with oatmeal and chocolate ganache, deserve to have a place on my blog. Let's mention goji berries standing proudly on these delicious oatmeal brownies and decorating them in their special way. Don't waste this chance to bake these oatmeal brownies for your family and friends like I did. Goji berries play with your serotonin level like chocolate does, just more healthfully.



Ingredients for the cake

  • 1 cup of oatmeal
  • 1 1/4 cup of boiling milk
  • 1/2 cup of cocoa
  • 1 1/2 cup of flour
  • 1 1/2 cup of sugar
  • 3 tbsp of honey
  • 1 tsp of baking powder + 1 tbsp of baking soda
  • 1/2 tsp of salt
  • 1/2 cup of vegetable oil
  • 1 tsp of vanilla extract
  • 3 eggs


Method
Soak oatmeal and cocoa in a boiling milk for 20 minutes. Mix the eggs with sugar, add soaked oatmeal and add all the other ingredients. Pour the batter into the pan covered with baking paper and bake it on 350 F degrees for 20-30 minutes until the tooth pick comes out clean when you stick it in the middle of the cake. 



Take out the cake and cool it down (20 minutes). Turn the cake upside down and pour the chocolate ganache on the top. Decorate the cake with Goji berries (soaked in water for at least 1 hour previously) and whipped cream.

Ingredients for the chocolate ganache

  • 1/4 cup of heavy cream
  • 1/2 cup of chocolate chips

Heat the heavy cream until it boils and add the chocolate chips. Whisk until the chocolate chips melt and the ganache gets smooth.
