Pink Cheesecake Queen




This refreshing cheesecake was born in my kitchen yesterday! A little bit sour only to justify it's own origin of being a cheesecake. Strawberry pudding gives this cake a fruity taste and off course a nice pink color. As it stands in the refrigerator starts to disappear and every time I open it there is less left on the plate...I wonder how this happens? :-) I should name it a Disappearing cake!


Ingredients for the cake

  • 3 eggs
  • 6 tbsp of sugar
  • 6 tbsp of flour
  • 1 tsp of baking powder
  • 2 tbsp of oil
  • 3 tbsp of cocoa




Bake the cake
Mix the egg whites until it gets firm, add sugar and mix more. When egg whites get creamy add the egg yolks and all the other ingredients to form a batter and pour it in the pan covered with baking paper. Bake this cake on a high temperature until the color of the cake changes to nice bronze color.


Ingredients for the cream

  • 1 strawberry pudding powder
  • 2 cups of milk
  • 1 cup of cream cheese
  • 7 tbsp of sugar
  • 1 tbsp of butter
  • 2 tbsp of confectionery sugar


Method
Make the pudding in milk with sugar and cool it down. In another bowl mix the butter with confectionery sugar and add cheese mixing until it gets creamy. Mix the pudding and cheese together and you will get a nice cheese cream for the cake. Pour the cheese cream on the cake and put it in the refrigerator.
You can decorate it as you wish.
I used some colors and whipped cream and gave myself a freedom to make this cake a queen.
