Dill Sauce

Fresh herbs are so inspiring for making a lot of good and tasty meals. Dill is the most aromatic herb in my garden... grows so nicely anywhere I plant it and has a beautiful and attractive smell. When I make a saucy meal, I have to make a few different kinds of sauces - dill sauce, tomato sauce or cheese sauce.   



Ingredients

  • a fist full of fresh dill
  • 3 tbsp of oil
  • 3 tbsp of flour
  • 1/2 cup of half and half
  • 1 tsp of sugar
  • 1 tsp of salt
  • 2 tbsp of lemon juice (or your favorite kind of vinegar)
  • 1/2 cup of soup stock
Method
Dill has to be washed and chopped finely on small pieces. Heat the oil, put the dill in it  and stir it by adding flour in it. The dill must be fried just to bring the sauce to more aromatic level.

Pour the soup in the dill while stirring and cook it until it starts thickening. Add the half  and half, lemon juice, salt and sugar and stir until the sauce gets nice and creamy. The sauce can be served on potatoes or fish or even rice. It can enrich any kind of lunch or dinner.
