Strawberry Cheesecake Phyllo Cups



This is not an ordinary cheesecake recipe... it's the one with semolina. Nevertheless, baked sweet cottage cheese is the food worth craving for. This time I used strawberries to bring some spring into this sweet phyllo basket. I'm thinking about some other fruits, to make a mix in this attractive dessert cup - it would be awesome.



Ingredients

  • 2 eggs
  • 1 cup of cottage cheese
  • 2 tbsp of semolina
  • 4 tbsp of sugar
  • 1/2 tsp of baking powder
  • 1 tbsp of vanilla sugar
  • 1 cup of sliced strawberries
Method
Mix all of the ingredients listed above and put 3 sheets of phyllo pastry into every compartment of the muffin pan which was previously buttered. The phyllo pastry must be cut into 4x4 inches. Fill the pastry with the batter and put in the preheated oven on 400 F degrees.


Bake these muffin baskets for at least 35 minutes to get a nice brownish color. Pour the powder sugar on the top and serve it cold. Don't worry, these cups are lite and not thick like an ordinary muffins. Strawberries give them the fruity freshness.
