Chinese Chicken Drumsticks

My ideas for the dinner party often come too late, so I'm always in a hurry. This time, believe it or not, I have prepared the recipes a week before for this event. Pork is on the menu every time we meet with my family and I needed a little chicken touch. :-) This recipe is well known all over the world but as I do with all my recipes I've changed it a bit. :-) Now this recipe is more like Rosvitha's chinese chicken drumsticks.

Mac and cheese (with a little sprinkle of bacon)


There is so many varieties of this dish so I bring you one of mine. Of course, the tastiest one. :-) You need time just for cooking the macaronis or pasta (any sort you like) and in the meanwhile prepare the sauce. This is a quick lunch and the lunch that you can bring to work. The best thing is that you know exactly what it consists of. The others will be jealous and will ask for the recipe from you. Bell Pepper Peperonata


If you adore peppers just as I do, you will love this extra simple, a few ingredient dish. This is only a basic peperonata which can be enriched with a lot of seasoning or by adding onions, garlic, eggplant or 1-2 eggs to make a delicious and light meal. If you like it chili, use one tiny chili pepper to indulge yourself. Serving this delicious meal comes with mood... I was in a mood for chicken nuggets in a shape of a dinosaur. My son was so happy - for the dinosaurs - off course! :-)

Pork Paprikash


Paprikash is a one pot meal similar to goulash but with potatoes in it. Usually made with chicken meat, but this time I used pork meat to indulge my son's wish. He likes baby sized cubes of meat and potatoes but the original Pork Paprikash requires a bit larger shaped ingredients. It's easy to adapt to such a small bites meal...so sophisticated. :-)

Shepherd's Pie


This meat pie or casserole - also called Cottage Pie is very easy to make. It has a long history. Since the name of this pie is Shepherd's Pie, the lamb meat is necessary. There are a lot of people who aren't very fond of that kind of meat, but if some other meat is used the name of the pie must be changed...or we can be liberal and use any meat that we have at home :-)

Vegan Spring Soup

This lite soup is made of spring vegetables that I could find on the market. Very easy to make and healthy. No fat at all and dairy products were avoided. Nice and mild taste prepares you for an upcoming meal. My stomach is extremely grateful for this treat - hope that your will be too.

Dill Sauce

Fresh herbs are so inspiring for making a lot of good and tasty meals. Dill is the most aromatic herb in my garden... grows so nicely anywhere I plant it and has a beautiful and attractive smell. When I make a saucy meal, I have to make a few different kinds of sauces - dill sauce, tomato sauce or cheese sauce.

Pork Empanada


Empanadas are very practical meal for lunch, dinner or even for a dessert if you stuff them with something sweet. For this occasion, I have made pork filling and a little bit of cheese which melted and gave empanadas an extra taste. Very simple dough and relatively quick meal can be served with salad of your choice... My choice of salad was a Quick Bean Salad and I haven't made a mistake with it. Great combination!

Brussels sprouts in 7 minutes

Oh, those little cabbages called Brussels sprouts are really healthy and tasty. So quick to cook and prepare, this nice side dish, always takes my attention! Any kind of meat goes along this side dish - pork ribs, fish, chicken or even lamb. Imagine your plate with a slice of meat, a little mash potatoes and these little green friends as a nutritional decoration - pretty amazing!

Chicken Breasts in Sauce


The quickest meat to prepare is certainly chicken breast. Can be so delicious and has a mild taste so every seasoning can bring it to a higher level. I have tried to make it in a few different ways but this has won the title of the best and quickest. Chicken breasts cut into small cube pieces in a delicious sauce, served with mash potatoes was on our table for lunch today... Everyone liked it very much!

When I need something lite and creamy for lunch, I just make this magnificent creamy soup to indulge my cravings. It's not complicated to make it and it's my choice what to put inside. I open my refrigerator, take out the vegetables I have and put them in the bowl to boil them. The simplest meal ever and above all, extremely healthy.

Broccoli Side Dish


So healthy and tasty broccoli side dish should be made more often. My husband is not a fan of this meal but my son likes it more. This was the perfect way to make my son to eat this vegetable. If you ask me, this is a perfect side dish along all sorts of meat or soya or just rice and other boiled vegetables. It's quick and simple - everyone can make this!

Coleslaw Salad


Add some refreshment to your lunch by preparing this amazingly delicious traditional salad.
