Paprikash is a one pot meal similar to goulash but with potatoes in it. Usually made with chicken meat, but this time I used pork meat to indulge my son's wish. He likes baby sized cubes of meat and potatoes but the original Pork Paprikash requires a bit larger shaped ingredients. It's easy to adapt to such a small bites meal...so sophisticated. :-)
Ingredients
- 1/2 leek cut in small pieces
- 2 cups of pork meat cut in small cubes
- 2 cups of yellow potatoes
- 3 tbsp of oil
- 3 tsp of vegetable seasoning
- a pinch of pepper
- 1 tsp of salt
- 3 tsp of sweet paprika
- 1/4 cup of white wine
- 1 clove of garlic, grinded
- a little bit of fresh parsley for garnish
Method
Prepare the leek, meat and potatoes cut in small pieces. Put the oil into the pot placed on the medium heat. Start frying the leak, not for long before you add meat. Stir it while frying and the meat will loose some water and will start to cook. When the water evaporates add the vegetable seasoning, salt and sweet paprika and add water to cover the meat. Cook it covered at low heat for at least 30 minutes.
As some water evaporated, add some more and add the potatoes in the paprikash. The water must be above the potatoes and meat or in same level.
Cover the pot again and cook at a low heat for 30 minutes.
Now it's time to add pepper, because the pepper makes the dish cancerogenic if it's cooking for a long time. Add the white wine mixed with grinded garlic and cook it for 5 minutes more. Cover it and turn of the heat. Leave it to rest for at least 15 minutes before serving. Garnish it with fresh parsley.
